If you're fed up with boiled runner beans, or you've got too many, these 2 ideas might help:
Runner Bean Chutney - really good with cold meat
2 lbs beans (can also use French beans, or a mix of the two types)
1.5 lbs onions
1 to 2 lbs of light brown sugar (not sure what the proper name is)
1 pint Sarsons malt vinegar (not cheap stuff as it tastes horrible)
1 tablespoon of dry mustard
1 tablespoon tumeric
1 tablespoon cornflour
I usually add a couple of cloves of garlic as well.
Cook sliced beans in salted water until tender.
Cook chopped onion in ½ pint of the vinegar in a large saucepan.
While the beans and onions cook mix dry ingredients (cornflour, turmeric and mustard) to a smooth paste with some of the remaining vinegar.
Strain cooked beans and add to the cooked onions with the most of the rest of the vinegar.
Cook for 10 minutes then add the sugar.
Finally stir in the paste made from the dry ingredients and boil for a further 15 minutes. (Tip: it's a good idea to keep back a little of the vinegar to rinse the cornflour etc from the jug.) If it looks a bit dry add a bit of water.
Put into jam jars.
Tastes even better after a month. Keeps for at least 9 months- 1 year
Runner Bean fry-up
Slice and boil some beans. (Can use left overcooked beans from the previous day)
Slice and fry some onion and bacon pieces, and garlic if you want. Could also fry up some mushrooms and tomatoes as well if you want.
Strain the beans and tip into the frying pan with the bacon and onions. Stir it about a bit.
Eat.
