Get some nice chicken thighs, and bone them (or buy the boneless ones if you are a lazy ar*e).
Heat a frying pan to a good hot temp, rub the chicken thighs all over with olive oil,chuck them in the pan, massive hissing noises and smoke is good, fry for oh I don't know I do this sort of thing on autopilot - 10 minutes?
Meanwhile finely chop half a clove of garlic per thigh (if you don't like garlic, eat something else) and a bunch of parsley (a chopped handful per person)
Wash your lettuce, (the ordinary soft kind is best, crinkly or just plain) - one per person. Dry your lettuce. Pile it on the plates.
Turn the chicken over when the skin is really nice and crispy brown (if you don't like skin, eat something else), and turn it down to a medium heat.
When its done, put the chicken skin up on the mounds of lettuce. Leave the pan on the heat.
Chuck an ounce (or two) of butter per person in the pan (if you don't want heart disease, eat something else), and add the garlic, sweat for a minute or two, add the parsley and give it another 30 seconds, then chuck in a tablespoon or two of good vinegar (sherry is best in my view, but red wine, balsamic if you must or cider at a push would do - not the chippy stuff though) and let it sizzle and evaporate, stirring and scraping all the lovely brown stuff on the bottom of the pan into the mix - chuck in a nice load of salt to up the health risks, and some black pepper. Pour 'sauce/dressing' over the top of chicken and lettuce. Eat with big chunks of nice bread.

Can do similar with bacon (or pancetta) very tasty. Or bitsa hot fried fish. yum yum.

Cubed pigeon breast is good, too (keeping it rare).
