Here's a delicious recipe. Try this and you will be making another batch tomorrow night and then the next night etc etc. :D The expensive bits are the cocoa and the chocolate, if you buy the best stuff, it's worth it though.

Part 1:

160g unsalted butter (salted will do though)
200g high quality plain cooking chocolate (e.g. Tesco Luxury Contintental Chocolate 72% cocoa)

Put the oven on 180C, put some greaseproof paper into a 25cm flan dish (for quiches), press it into the corners, but it doesn't have to be neat, the mixture will hold it down.

Chop and break up the butter and chocolate and melt them both together in a bowl, in the microwave set to defrost, 2 mins at a time, it might take 10 minutes overall, keep an eye on it though and stir well each time you take it out. It doesn't matter if there are a few tiny lumps of chocolate. You might find it faster to grate the chocolate, but I haven't bothered trying so far.

Part 2:

65g plain flour
80g cocoa (Green & Blacks is very good)
1 tsp baking powder
300g demerara sugar
4 large eggs (Free range please)

Sieve the plain flour and cocoa into the melted mix, then add the baking powder and sugar. Stir it all in until mixed well. Break the eggs in too, and stir it all up until it's very smooth.

Stick it in the flan dish on the paper, bake for 30-35 minutes. Not too long or they will dry out too much - it should still be stodgy in the middle. It's really important to let it cool right down (best wait until next day - which will be difficult), or you'll make a mess of getting the brownies out of the dish.
