Mince and butternut rotis

Mince and butternut rotis

Preparation time: 15 minutes
Cooking time: 25 minutes


Ingredients


• 30ml sunflower oil
• 1onion, chopped
• 15ml (or more to taste) medium curry powder
• 500g lean beef mince
• 1x 410 g can chopped tomatoes
• 5ml sugar
• 500g butternut, cubed
• 6 rotis (find them in the freezer section of your supermarket) or bread rolls

Method

Heat the oil in a large saucepan.
Add the onion and fry over a medium heat for five minutes before adding the curry powder and stirring well.
Add the mince and cook, stirring until it is no longer pink.
Add the tomatoes, sugar and butternut.
Bring to the boil, then reduce the heat and simmer, covered, for about 20 minutes until the butternut is tender.
Serve rolled up in a roti, or on a bread roll, with a tossed salad.

COOK's TIPS
Try lamb mince for a variation.
If your family enjoys the taste, use ostrich mince as a healthy alternative to beef.
Add fresh mint for extra flavour.
