Soft fruit is coming into season, what to do with all those raspberries...!!
500g raspberries
500g granulated sugar
1litre vodka
Make up a syrop with the sugar and the vodka, heating it gently, not enough to boil off any of the alcohol.
Crush the fruit roughly, put in a sterilised jar or bottle, pour over the warm syrop.
Leave for a minimum of 6m, 2 years is better.
Strain off and bottle.
I've just bottled our 2008 batch, (in order to make room for the 2011 batch) it is quite superb.
Also works well with white rum I'm told, but I've not tried it.
